The important soup stock, which is also the core of Shinano's taste, takes a long time with kelp and bonito flakes and uses the stock to season each dish.
Seasonal and seasonal ingredients are cherished for each day and night menu, and the arrangements and productions cultivated in the cooking contest are carefully devised.
